Sausage and Egg Muffins

These muffins are so easy and can be eaten for breakfast or a snack
Ingredients (yields 14 muffins)
9 large eggs
1 cup of shredded sharp cheddar cheese
1/2 pound sausage
salt and pepper to taste
Brown sausage in sauce pan over medium high heat until brown. In mixing bowl mix eggs, shredded cheese and salt and pepper. Add browned sausage to egg mixture. Grease muffin tin with cooking spray. Fill muffin tins 2/3 full. Bake at 350 degrees for 25 minutes. Insert toothpick in center, if comes out clean they are done.
You can store these in the refrigerator and heat in the microwave. They are great to take to work. My co-workers love them, even the ones that are not on low-carb diet.
