This is an easy low-carb recipe I created. The carb crew loves it. Tom likes it too and I added some Tuna for him (see picture below) .
2-3 tablespoons of olive oil
2 tsp of minced garlic (approx 2 cloves)
4-5 ounces of cream cheese
1 cup of heavy cream
1 cup of parmesan cheese
Spiralize zucchinis (or you can buy them in some grocery stores). Place spiralized zucchinis in salad spinner or strainer salt the zucchinis and mix. Let zucchinis sit and sweat for 20-25 minutes. In the meantime, in a large skillet heat olive oil over med - med high heat. Add garlic and cook until fragrant. Add cream cheese and heavy cream and cook until creamy. Rinse the zucchinis if you do not want the salt. Shake or spin the zucchini and then pat dry with paper towels. Add zucchini to cheese mixture in skillet and cook for 3-5 minutes. The zucchini will be a little crunchy. If you cook them to long they become soggy. Remove skillet from heat and stir in parmesan cheese and salt and pepper to taste.

Add tuna (Tom loves) or Chicken, Shrimp......
